A story that smells of woodsmoke.
A pizzaiolo from Naples, a Roman alley and an oven built brick by brick.
The oven arrived before the chairs.
Ciro came from Naples with a sack of flour and one fixed idea: a real wood oven, right in the centre.
A craftsman from Nola built the oven brick by brick inside the alley's old workshop. The chairs came later.
Today his daughter Assunta is at the counter too: she makes the fried bites and picks the pizza of the month.

Flour, water, salt, yeast. And two days.
No tricks: a well-hydrated dough, slowly proofed in the fridge and stretched by hand to order. That is why the pizza is light and easy to digest.
